You NEED to Try This Recipe for Cornmeal-Bacon Waffles with Apple Compote

  • 1 three/four cups buttermilk
  • 1/3 cup olive oil
  • 2 massive eggs
  • 1 cup superb yellow cornmeal
  • three/four cup all-purpose flour
  • three/four cup white whole-wheat flour
  • 1 tablespoon coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • three thick-cut bacon slices, cooked and crumbled (about 1/3 cup)
  • three tablespoons chopped contemporary chives
  • Olive oil cooking spray
  • three tablespoons unsalted butter
  • 6 cups chopped purple apples (from about 1 lb. and six oz.. of apples)
  • 1 tablespoon chopped contemporary thyme
  • 1/four teaspoon kosher salt
  • 1/2 cup natural maple syrup
  • 1 tablespoon apple cider vinegar


  1. Make waffles: Whisk buttermilk, oil, and eggs in a big bowl. Stir cornmeal, flours, coconut sugar, baking powder, and salt in a separate bowl. Slowly whisk cornmeal combination into buttermilk combination. Fold in bacon and chives. Let stand for 15 mins.

  2. Preheat waffle iron; preheat oven to 200°F. Make compote: Melt 2 tablespoons of the butter in a big skillet over medium-high warmth. Add apples, thyme, and salt. Cook, stirring, till cushy, about 6 mins. Add maple syrup and vinegar; prepare dinner, stirring continuously, till apples are covered, 2 mins. Remove from warmth; stir in ultimate 1 tablespoon butter.

  3. Mist waffle iron with cooking spray. Cook waffles in batches till browned and finished. Mist with further cooking spray as wanted. Keep completed waffles heat in oven. Serve waffles with compote.
