  • three cups cauliflower florets (from 1 2-lb. head)
  • three cups low-sodium hen broth
  • three tablespoons tremendous yellow cornmeal
  • four oz Cheddar cheese, shredded (about 1 cup)
  • 1 pint grape tomatoes
  • Olive oil cooking spray
  • 2 tablespoons unsalted butter
  • eight oz cremini mushrooms, sliced
  • three/four teaspoon kosher salt
  • half of teaspoon black pepper
  • 2 tablespoons scorching brewed espresso
  • 1 teaspoon cornstarch
  • 1/four cup thinly sliced scallions


  1. Preheat broiler with oven rack 6 inches from warmth. Process cauliflower florets in a meals processor till finely chopped.
