The base of this hearty cake may remind you of gingerbread at first bite, but it’s the exotic topping, a somewhat crunchy, somewhat gooey layer of maple syrup melded with dried fruit, seeds and nuts, that really distinguishes it as a breakfast indulgence. That said, it’s simple to make for quick morning meals and tasty enough to savor piece by piece.

Cake

  • 1/2 cup honey
  • 1/2 cup vegetable oil
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon vanilla
  • 1/2 cup spelt flour, 1/2 cup triticale, or 1/2 cup King Arthur 100% White Whole Wheat Flour
  • 1 1/4 cups King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Topping

  • 1/2 cup maple syrup
  • 1/2 cup raisins, dark or golden
  • 1/3 cup dried apricots, coarsely chopped
  • 1/2 cup dried pineapple, finely chopped
  • 2 tablespoons sesame seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup King Arthur Unbleached All-Purpose Flour
  • 1/4 cup finely chopped almonds

Cake

  • 6 ounces honey
  • 3 1/2 ounces vegetable oil
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon vanilla
  • 1 3/4 ounces spelt flour, 1 3/4 ounces triticale, or 2 ounces King Arthur 100% White Whole Wheat Flour
  • 5 1/4 ounces King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Topping

  • 5 1/2 ounces maple syrup
  • 3 ounces raisins, dark or golden
  • 1 1/2 ounces dried apricots, coarsely chopped
  • 2 1/2 ounces dried pineapple, finely chopped
  • 5/8 ounce sesame seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 ounce King Arthur Unbleached All-Purpose Flour
  • 1 ounce finely chopped almonds

Cake

  • 170g honey
  • 99g vegetable oil
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon vanilla
  • 50g spelt flour, 50g triticale, or 56g King Arthur 100% White Whole Wheat Flour
  • 149g King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Topping

  • 156g maple syrup
  • 85g raisins, dark or golden
  • 43g dried apricots, coarsely chopped
  • 71g dried pineapple, finely chopped
  • 18g sesame seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 28g King Arthur Unbleached All-Purpose Flour
  • 28g finely chopped almonds

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9″ x 9″ pan.
  2. Beat the honey, oil, eggs and vanilla together in a large bowl.
  3. Whisk together the flours, baking soda and salt, and mix them gradually into the egg mixture until all ingredients are well-blended.
  4. Spread the batter into the prepared pan.
  5. Bake the cake for 15 minutes, then remove it from the oven and cool it slightly on a wire rack.
  6. Combine all of the topping ingredients in a small bowl and mix well; use a gentle touch to spread them over the cake.
  7. Return the pan to the oven and bake for an additional 20 minutes, or until the topping is just lightly browned.
  8. Let the cake cool completely in the pan before cutting and serving.
  9. Store the coffee cake at room temperature, well wrapped, for several days. Freeze for longer storage.
