  • 1 pound skirt steak
  • 1 teaspoon kosher salt
  • half of teaspoon black pepper
  • half of teaspoon floor cumin
  • 2 tablespoons finely grated purple onion
  • 1 teaspoon lime zest
  • Grapeseed oil
  • three/four cup diced tomato
  • 1/four cup thinly sliced radishes
  • 1 tablespoon contemporary lime juice
  • 1 tablespoon extra-virgin olive oil
  • eight 6-inch corn tortillas, warmed
  • eight cilantro springs, torn
  • 2 oz. crumbled queso fresco (about half of cup)
  • eight lime wedges, for serving


  1. Preheat grill to prime (450°F to 550°F). Sprinkle steak with salt, pepper and cumin. Rub steak with onion and lime zest. Generously oil grill grate with grapeseed oil. Grill steak, coated with grill lid, till completed, three to four mins in keeping with facet. Remove from grill; let stand 10 mins earlier than thinly cutting around the grain.

  2. Stir in combination tomato, radishes, lime juice and olive oil in a small bowl. Divide steak frivolously amongst tortillas; most sensible with tomato combination, cilantro and cheese. Serve with lime wedges.
