This recipe was once changed from the Bowls of Plenty Cookbook. A guide loaded with foods made with a number of grains equivalent to millet, quinoa, farro, and many others. This dish was once so fast and simple to whip up, I used my fast Cuban Black Beans and leftover home made salsa verde.

Quinoa Huevos Rancheros Bowls

Eggs don’t seem to be only for breakfast, I like them for lunch or dinner too! This flavorful protein-pack breakfast bowl has a Mexican aptitude, crowned with salsa verde, black beans, avocados and queso fresco.

Ingredients:

  • 1 cup cooked quinoa
  • 2 cups cooked warm black beans
  • five ozavocado, sliced
  • 1 lime, halved
  • half teaspoon kosher salt
  • nonstick spray
  • four massive eggs
  • half cup salsa verde, home made or jarred
  • 1/four cup bitter cream, blended with water to skinny
  • half cup crumbled queso fresco
  • contemporary cilantro, for topping

Directions:

  1. Spoon quinoa and beans aspect through aspect into four bowls. Top with avocado, season with salt and squeeze lime juice over the whole thing.
  2. Heat a big skillet over medium-low warmth, spray with oil and prepare dinner eggs on your liking.
  3. Top each and every bowl with an egg, salsa verde, queso fresco and drizzle with bitter cream. Finish with cilantro.
