Quinoa Fiesta Enchilada Bake

Because I

Quinoa, black beans, corn, cilantro and inexperienced chiles coated with a snappy home made enchilada sauce and baked within the oven with tacky goodness crowned with avocado, cilantro and scallions.

Perhaps as a result of I’m enchilada obsessed, that is my FAVORITE option to devour quinoa – absolute best for Meatless Mondays!! You could make this forward, then bake when able to devour, and leftovers (with out the avocado) are simply as just right because the day you made it which is absolute best to pack for lunch. Plus, that is protein packed – over 17 grams in keeping with serving!

  • 1/2 tsp olive oil
  • 1 clove beaten garlic
  • cooking spray
  • 1 1/four cups quinoa, rinsed and tired
  • 1 (eight ounces) can tomato sauce
  • 2 cups reduced-sodium hen or vegetable broth*
  • 1 1/2 teaspoons cumin
  • 1 tbsp chipotle en adobo sauce (or extra if you wish to have it highly spiced)
  • kosher salt and freshly floor black pepper, to style
  • 1 (four ounces) can diced inexperienced chiles
  • three/four cup canned black beans, tired and rinsed
  • three/four cup recent or frozen thawed corn
  • 1/four cup chopped recent cilantro, plus 2 tbsp for garnish
  • 1 1/2 cups part-skim shredded Mexican cheese mix, divided*
  • 1 medium (four ounces) haas avocado, diced
  • 2 tbsp chopped scallions

* For gluten-free you should definitely test the labels.


Preheat the oven to 400°F. Lightly spray a nine x 12 baking dish with oil.

In a medium saucepan cook dinner the quinoa with 1 three/four cups broth in line with bundle directions; when cooked, fluff with a fork and put aside.
