Preamble: A great alternative to using icing to decorate cakes is using fondant instead. This is a medium level recipe because it is very hands on, a little messy and has to refrigerate for 9 hours before ready.

Ingredients for this recipe for 10 people:
16 oz. (450g) miniature marshmallows,
2 lb. (900g) powdered sugar,
1/4 c. (30g) butter,
1 tsp. (10g) vanilla extract,
1/4 c. (5cl) water
How To Make Fondant from scratch:
In a microwave-safe bowl, heat the marshmallows on high for about 30 seconds, until they are melted.
Add the vanilla and the water to the marshmallow mixture and mix well.
Add the powdered sugar one cup at a time, leaving one cup to use afterwards. The dough should have a sticky consistency.
Dust your working surface with some of the remaining cup of powdered sugar. Cover your hands in butter to keep the dough from sticking to them and then knead the dough on your working surface. Knead the dough until it is no longer sticky (between 5 and 10 minutes).
Roll the fondant dough into a ball and wrap it in plastic wrap to refrigerate for about 9 hours.
When ready to use, remove the fondant from the refrigerator, let it reach room temperature, and dust your work surface with powdered sugar. Using a rolling pin, roll out the fondant.
