Preamble: Making Mexican food is easy when you have a recipe! This recipe is a great dinner option for a family of 4-6. You’ll need to buy 12 corn tortillas in advance as well as a can of enchilada sauce. Enjoy!

Ingredients for this recipe for 4-6 people:

1 lb. (450g) ground beef,
12 corn tortillas,
10 oz. (300ml) enchilada sauce,
3 c. (600g) shredded cheddar jack cheese,
Sour cream,
1/4 c. (40g) chopped onion,
8 oz. (250g) tomato sauce,
1 tbsp. (20ml) Worcestershire sauce,
2 tsp. (25g) chili powder,
1 tsp. (12g) garlic powder,
1 tsp. (12g) oregano,
1 tsp. (12g) paprika,
1/2 tsp. (5g) cumin,
1/2 tsp. (5g) black pepper

How To Make Enchiladas from scratch:
Preheat the oven to 350°F.
Over medium heat, brown the beef, onion and garlic powder simultaneously.
Heat a separate pan with a little bit of oil. Start cooking the tortillas in the pan for about 10 seconds on each side and set aside.
Add the tomato sauce, Worcestershire sauce, chili powder, garlic powder, oregano, paprika, cumin, and black pepper to the beef mixture.
Coat the bottom of a 10×13 inch casserole dish with enchilada sauce.
Put a tablespoon full of meat in each tortilla, add some cheese (save some to sprinkle over the top) and then roll the torilla placing it in the pan with the seam down.
Cover the tortillas in the rest of the tortilla sauce. Sprinkle with the rest of the cheese.
Bake for 20 minutes and then serve with sour cream.02
