Eggplant and Tomato Sauce

When you’re within the temper for a vegetarian meal, this can be a great fast weekday dish. I love to make use of additional virgin olive oil, it provides this sauce a pleasant taste. Top with just right grated cheese and experience over top finer or entire wheat pasta.

  • 1 medium eggplant, minimize in 1/2″ cubes
  • four cloves garlic, smashed and chopped
  • 2 tbsp additional virgin olive oil
  • 28 ouncescan plum tomatoes together with juice (I love Tuttorosso)
  • salt and contemporary floor pepper
  • chopped herbs like basil and parsley


In a big deep frying pan, saute garlic in olive oil. Add eggplant and saute about 2-Three mins. Coarsely chop tomatoes and upload to the pan. Season with salt and pepper and simmer, exposed about 15-20 mins. Add contemporary chopped herbs and toss with pasta (additional issues).
