Ingredients

Muffins

  • 1 half of cups King Arthur Whole Wheat Flour or King Arthur White Whole Wheat Flour
  • three/four cup quick-cooking oats
  • 1/four cup buttermilk powder or half of cup nonfat dry milk
  • 2/three cup sugar
  • 2 teaspoons baking powder
  • half of teaspoon salt
  • 1 cup recent or frozen cranberries, chopped, or sweetened dried cranberries
  • half of cup chopped pecans or walnuts, non-compulsory
  • 1 tablespoon orange zest (finely grated orange peel)
  • 2 massive eggs
  • three/four cup milk
  • third cup vegetable oil or melted butter

Glaze

  • 2 tablespoons orange juice
  • three tablespoons sugar or 1 cup confectioners’ sugar, sifted

Muffins

  • 6 oz. King Arthur Whole Wheat Flour or King Arthur White Whole Wheat Flour
  • 2 three/eight oz. quick-cooking oats
  • 1 three/four oz. buttermilk powder or nonfat dry milk
  • four five/eight oz. sugar
  • 2 teaspoons baking powder
  • half of teaspoon salt
  • three half of oz. recent or frozen cranberries, chopped, or four oz. sweetened dried cranberries
  • 2 oz. chopped pecans or chopped walnuts, non-compulsory
  • 1 tablespoon orange zest (finely grated orange peel)
  • 2 massive eggs
  • 6 oz. milk
  • 2 three/eight oz. vegetable oil or 2 five/eight oz. melted butter

Glaze

  • 1 ounce orange juice
  • 1 1/four oz. sugar or four oz. confectioners’ sugar, sifted

Muffins

  • 170g King Arthur Whole Wheat Flour or King Arthur White Whole Wheat Flour
  • 67g quick-cooking oats
  • 50g buttermilk powder or nonfat dry milk
  • 131g sugar
  • 2 teaspoons baking powder
  • half of teaspoon salt
  • 99g recent or frozen cranberries, chopped, or 113g sweetened dried cranberries
  • 57g chopped pecans or chopped walnuts, non-compulsory
  • 1 tablespoon orange zest (finely grated orange peel)
  • 2 massive eggs
  • 170g milk
  • 67g vegetable oil or 74g melted butter

Glaze

  • 28g orange juice
  • 35g sugar or 114g confectioners’ sugar, sifted

Instructions

  1. Preheat the oven to 375°F. Grease the wells of a 12-cup muffin tin, or line with papers, and grease the interior of the papers.
  2. To make the desserts: In a medium-sized bowl, whisk in combination the dry elements, then stir within the cranberries and nuts.
  3. Whisk in combination the orange zest, eggs, milk, and oil or melted butter.
  4. Add the rainy elements to the dry elements, stirring till mixed; do not beat, or your desserts will probably be difficult.
  5. Fill the muffin cups or liners about three/four complete.
  6. Bake for 18 to 20 mins, till they are golden brown.
  7. Remove them from the oven, depart them within the pan for five mins, then take out of the pan and switch them to a rack to complete cooling.
  8. To make the glaze: In a small saucepan or the microwave, stir in combination the glaze elements. Bring simply to a boil, to dissolve the sugar.
  9. Dip the tops of the nice and cozy desserts into the glaze.
  10. Store at the counter for 3 days, or freeze for as much as three months.
