Dough

  • 1 cup lukewarm milk
  • 2 huge eggs, at room temperature
  • third cup unsalted butter, lower up

Icing

  • 1/four cup unsalted butter, softened
  • 1 half cups confectioners’ sugar
  • half teaspoon vanilla extract

Dough

  • eight oz lukewarm milk
  • 2 huge eggs, at room temperature
  • 2 five/eight oz unsalted butter, lower up
  • 19 oz King Arthur Unbleached All-Purpose Flour
  • 1 three/four teaspoons salt
  • three half oz granulated sugar
  • 2 half teaspoons fast yeast or lively dry yeast

Filling

  • 2 five/eight oz unsalted butter, softened
  • 7 half oz brown sugar, packed
  • three/four ounce flooring cinnamon

Icing

  • three oz cream cheese, softened
  • 2 oz unsalted butter, softened
  • 6 oz confectioners’ sugar
  • half teaspoon vanilla extract

Dough

  • 227g lukewarm milk
  • 2 huge eggs, at room temperature
  • 74g unsalted butter, lower up
  • 539g King Arthur Unbleached All-Purpose Flour
  • 1 three/four teaspoons salt
  • 99g granulated sugar
  • 2 half teaspoons fast yeast or lively dry yeast

Filling

  • 74g unsalted butter, softened
  • 213g brown sugar, packed
  • 21g flooring cinnamon

Icing

  • 85g cream cheese, softened
  • 57g unsalted butter, softened
  • 170g confectioners’ sugar
  • half teaspoon vanilla extract

Instructions

  1. To make the dough: Mix in combination and knead the entire dough elements — by way of hand, mixer, or bread device — to make s clean, cushy dough.
  2. Place the dough in a flippantly oiled bowl, flip to oil both sides, quilt the bowl, and let the dough upward thrust for 60 mins, or till it is just about doubled in bulk.
  3. To fill and form the buns: Gently deflate the dough, and switch it to a flippantly greased paintings floor. Roll the dough right into a 16″ x 21″ rectangle.
  4. Spread the dough with the third cup butter. Mix the brown sugar and cinnamon, and sprinkle it lightly over the dough.

  9. To make the icing: In a small bowl, beat in combination the cream cheese, butter, sugar, and vanilla.
  10. Remove the buns from the oven. Spread the icing at the buns whilst they are heat.
  11. Serve buns heat, or at room temperature. Wrap in plastic and retailer at room temperature for an afternoon or so; freeze for longer garage.
  12. Yield: 12 huge buns.
