Is there another gentle supper dish fairly so comforting as melted cheese on toast? Welsh Rabbit (a.okay.a. Welsh Rarebit) has been a mainstay of straightforward suppers, on each side of the Atlantic, for hundreds of years. And when the cheese is sharp cheddar, and the bread home made — neatly, it simply does not get any higher.

Ingredients

Cheese

  • three tablespoons butter
  • 6 to eight tablespoons King Arthur Unbleached All-Purpose Flour, divided
  • half of teaspoon dry mustard or 1 teaspoon ready mustard, not obligatory
  • 1 teaspoon Worcestershire Sauce, not obligatory
  • half of teaspoon salt
  • a pinch of cayenne pepper, not obligatory
  • half of cup beer or ale*
  • 1 1/Four cups milk: skim, low-fat, full-fat, evaporated, part & part, or gentle cream
  • 2 cups shredded sharp cheddar cheese

Toast

  • 6 thick slices toast, your selection of bread; see guidelines, beneath, for our favorites

  • 1 half of to two oz King Arthur Unbleached All-Purpose Flour, divided
  • half of teaspoon dry mustard or 1 teaspoon ready mustard, not obligatory
  • 1 teaspoon Worcestershire Sauce, not obligatory
  • half of teaspoon salt
  • a pinch of cayenne pepper, not obligatory
  • Four oz beer or ale*
  • 10 oz milk: skim, low-fat, full-fat, evaporated, part & part, or gentle cream
  • eight oz shredded sharp cheddar cheese

Toast

  • 6 thick slices toast, your selection of bread; see guidelines, beneath, for our favorites

  • 42g butter
  • 42g to 57g King Arthur Unbleached All-Purpose Flour, divided
  • half of teaspoon dry mustard or 1 teaspoon ready mustard, not obligatory
  • 1 teaspoon Worcestershire Sauce, not obligatory
  • half of teaspoon salt
  • a pinch of cayenne pepper, not obligatory
  • 113g beer or ale*
  • 283g milk: skim, low-fat, full-fat, evaporated, part & part, or gentle cream
  • 227g shredded sharp cheddar cheese

Toast

  • 6 thick slices toast, your selection of bread; see guidelines, beneath, for our favorites

Instructions

  1. In a saucepan set over medium warmth, soften the butter, then stir in three tablespoons of the flour, the dry mustard, Worcestershire, salt, and cayenne till neatly mixed.
  2. Gradually stir within the beer or ale, whisking till no lumps stay and the sauce is thick.
  3. Put the rest three to five tablespoons flour in a bowl or measuring cup. Whisk within the milk, stirring vigorously to keep away from lumps. Pour the milk aggregate into the saucepan, whisking repeatedly till the entire milk is added and the mix is easy. Cook till very popular, however no longer simmering.
