  • 2 tablespoons important wheat gluten, not obligatory — for more potent upward thrust
  • 1 half of teaspoons Deli Rye Flavor, not obligatory — for taste
  • 2 teaspoons fast yeast
  • 1 three/four teaspoons salt
  • 2 tablespoons caramel colour, not obligatory — for colour
  • 1 half of cups lukewarm water
  • three tablespoons vegetable oil
  • 1 half of teaspoons caraway seeds, not obligatory

  • five five/eight oz. pumpernickel flour
  • 6 1/four oz. King Arthur Unbleached All-Purpose Flour
  • four oz. King Arthur 100% White Whole Wheat Flour or Premium Whole Wheat Flour
  • 2 1/four oz. rye chops or cracked wheat
  • half of ounce important wheat gluten, not obligatory — for more potent upward thrust
  • 1 half of teaspoons Deli Rye Flavor, not obligatory — for taste
  • 2 teaspoons fast yeast
  • 1 three/four teaspoons salt
  • half of ounce caramel colour, not obligatory — for colour
  • 12 oz. lukewarm water
  • 1 1/four oz. vegetable oil
  • 1 half of teaspoons caraway seeds, not obligatory

  • 159g pumpernickel flour
  • 177g King Arthur Unbleached All-Purpose Flour
  • 113g King Arthur 100% White Whole Wheat Flour or Premium Whole Wheat Flour
  • 64g rye chops or cracked wheat
  • 14g important wheat gluten, not obligatory — for more potent upward thrust
  • 1 half of teaspoons Deli Rye Flavor, not obligatory — for taste
  • 2 teaspoons fast yeast
  • 1 three/four teaspoons salt
  • 14g caramel colour, not obligatory — for colour
  • 340g lukewarm water
  • 35g vegetable oil
  • 1 half of teaspoons caraway seeds, not obligatory

Instructions

  1. Combine the entire elements, and blend and knead — through hand, electrical mixer, or bread gadget — to make a stiff, sticky dough.
  2. Cover the dough, and let it upward thrust till it is nearly doubled in bulk, about 1 hour.
  3. Divide the dough into 3 items, and form them into logs.
  4. Place in greased canapé tubes, connect caps to ends, and make allowance the loaves to upward thrust till they have got stuffed the tubes three/four complete, about 30 mins.
