Ingredients:

  • 1 medium eggplant, sliced 1/eighth inch thick
  • 1 tsp kosher salt
  • 1 tbsp olive oil
  • half of small onion, diced
  • Three garlic cloves, beaten
  • 1/Eight tsp cracked black pepper
  • 2 cups beaten tomatoes
  • 1/Eight tsp crimson pepper flakes (not obligatory)
  • 1 bay leaf
  • 1 teaspoon contemporary thyme
  • four contemporary basil leaves, finely chopped
  • 1 small crimson bell pepper, diced
  • 1 small yellow bell pepper, diced
