Cupcakes

  • 3/8 cup (6 tablespoons) unsalted butter, softened
  • 1 cup brown sugar, light or dark, packed
  • 2 large eggs
  • 1 1/2 cups King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon cinnamon, with plain applesauce or 1/2 teaspoon cinnamon, with flavored applesauce
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups applesauce, plain or cinnamon-flavored

Cream Cheese and Coconut Frosting

  • 3/4 cup (2 small packages) cream cheese, softened
  • 1 1/2 to 2 cups confectioners’ sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon lemon oil or 1 teaspoon grated lemon rind, optional
  • 1 1/4 cups coconut flakes

Cupcakes

  • 3 ounces unsalted butter, softened
  • 7 1/2 ounces brown sugar, light or dark
  • 2 large eggs
  • 6 1/4 ounces King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon cinnamon, with plain applesauce or 1/2 teaspoon cinnamon, with flavored applesauce
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 12 3/4 ounces applesauce, plain or cinnamon-flavored

Cream Cheese and Coconut Frosting

  • 6 ounces cream cheese, softened
  • 6 to 8 ounces confectioners’ sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon lemon oil or 1 teaspoon grated lemon rind, optional
  • 3 3/4 ounces coconut flakes

Cupcakes

  • 85g unsalted butter, softened
  • 213g brown sugar, light or dark
  • 2 large eggs
  • 177g King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon cinnamon, with plain applesauce or 1/2 teaspoon cinnamon, with flavored applesauce
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 361g applesauce, plain or cinnamon-flavored

Cream Cheese and Coconut Frosting

  • 170g cream cheese, softened
  • 170g to 227g confectioners’ sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon lemon oil or 1 teaspoon grated lemon rind, optional
  • 106g coconut flakes

Instructions

  1. To make the cupcakes: Preheat the oven to 375°F. Line a 12-well muffin pan with papers and spray the insides, or lightly grease the pan.
  2. In a medium bowl, beat the butter and sugar together until light and creamy.
  3. Beat in the eggs, one at a time, mixing well after each addition and stopping to scrape the sides and bottom of the bowl.
  4. In a separate bowl, whisk together the dry ingredients.
  5. Add the dry ingredients to the butter/egg mixture.
  6. Stir in the applesauce until well blended.
  7. Spoon the batter into the prepared muffin pan.
  8. Bake the cupcakes for approximately 25 minutes, or until a cake tester inserted into a cupcake comes out clean.
  9. Remove the cupcakes from the oven, and cool in the pan on a rack for five minutes.
  10. Remove the cupcakes from the pan and return to the rack to finish cooling completely before frosting.
  11. To make the frosting: Mix the cream cheese, sugar, extract and oil together, beating until smooth.
  12. The frosting will be a little thinner than you may be accustomed to, but it needs to be to catch and hold the coconut.
  13. To assemble the cupcakes: Frost the tops of the cupcakes.
  14. Put the coconut in a bowl.
  15. Hold each cupcake upside down and press it gently into coconut.
  16. Store the frosted cupcakes, covered, in the fridge for up to 5 days.
